Finally! 'Cold' is here!!!!

Our rain season is finally here, and with that, a much needed cooler temperature. Yes, thermometer 'dropped' to 22c/72f (I know, but our summer is over 40c/104f)...so, cold weather breakfast....

Menudo!

Wiki: Menudo, or pancita ([little] gut or [little] stomach, from Spanish: Panza; "Gut/Stomach") is a traditional Mexican soup, made with beef stomach (tripe) in broth with a red chili pepper base. Usually, hominy, lime, chopped onions, and chopped cilantro are added, as well as crushed oregano and crushed red chili peppers.

I love Menudo, pancita or mondongo as it is called in some places... the way they prepare it in the North is different. I do prefer Orégano and crushed chile seco, not serrano. Mexico's food offerings are so diverse... I love it!
