When it comes my cooking, I find a watch half the equation to a passible result. Time and temperature ... Yes, I confess, I use a 2-minute timer even when steeping a cup of tea! |

Do you high heat sear and move to lower heat to finish? I always did and saw a pro that did it the other way around. I tried it and it was awesome. Medium low heat until about done and then over to high heat to finish to sear.
