Today, bringing back some childhood memories. No EVOO. Only thing that was available at the farm was lard. Add a small amount....(trust me, pork fat and smoke.....HEAVEN!). A dish I have posted before: migas. (Onion, tomato, tortilla, eggs)

Cooking with charcoal is great.
I see you have the charcoal chimney which makes getting red hot charcoal a breeze!

I completely agree. The flavor is just amazing on everything, from appetizers to desserts. And the chimney....a beauty! Fire up, go away, come back 15 minutes later and....ready!!!!
