You really need a microsurgeons hands and eyes for that. Makes me really appreciate how these movements are made and the folks that make them and fix them.

Is that a glass rod he's using? I was taught to use sharpened pith sticks. It's amazing how much more you appreciate watchmakers when you try your own hand at it. Of course I'm only working on ETA movements as I've got many more years of practice before I pry open one of my Rolexes (and probably never for some of my other complicated watches).
