That is the HEV (Helium Vent) of the Sea-Dweller.

Inside a diving bell, the divers live in an atmosphere that consists of various gasses, including a high percentage of Helium. The TINY Helium molecules that are in the atmosphere inside diving bells can enter the watch, but during decompression there would be a risk of the crystal popping off the watch since those HE gasses want to get out again. The HEV makes sure that those gasses are released without harming the watch during decompression.

so you just press it (or use a pin to release it) before the watches leaves the water??

No, it's "automatic". You cannot press it or anything.

Also, please note that the HEV has no effect whatsoever in water. It is made to release the HE gasses INSIDE the watch and INSIDE a diving bell.

When you dive with the SD in the sea, the HEV is useless, and it is the extra thick crystal, Triplock crown and thicker caseback that make it able to withstand 1,220 metres depth. The Triplock crown is also on the Sub Date, YM, and new GMT IIc, but those watches are not waterproof to 1,220 metres but only 100 metres (at least!) since they have "normal" thickness crystals and casebacks (but the Triplock is still rated to 1,220 metres).
