The way you smell no ones going to get close enough to see your watch...

Any SS Rolex will fly reasonably under the radar, IMO (maybe not the YMII)

Perfect choice IMHO too, flies low, only someone that knows and is looking will pick this up.

Why do you need an "understated" watch at work? If you're like me, you spend a ton of time at work and meet a variety of people who may also share your interest in watches. I wouldn't worry about it. The mistake is thinking that people who aren't into watches actually notice what you're wearing - the reality is they don't even see it, or if they do, it doesn't register. A family member asked my opinion last weekend if her YG Lady President with diamond dial/bezel was too extreme. My response was that I've seen more "extreme" looking Michael Kors watches and no one cares.

I have a 39mm exp 1 and for the past year nobody has said anything. It doesn't mean people haven't noticed though.
