I like to think that a Rolex is an investment in your happiness rather than a financial investment so from that point of view I would recommend you buy whatever you like the best regardless of others opinions that’s how I ended up with my Explorer ii and couldn’t be happier.

And remember some of the rarest and most collectible watches where once the least popular models when they where new 😜

Personally I like the BLNR, but for your needs I would suggest a Sub no-date. It is at a reasonable price point if you wanted to buy new, avoids complications that some don't use or want, but still is a Rolex, could be more friendly in terms of possibly getting away with putting off servicing if unsure about what you want to do with the watch, (because of the lack of said complications), and probably is better associated with the brand by the broader market of potential aspirational buyers if you seek to move it. And it is a damn classic watch too.

The Hulk is a stunner, but sometimes I wonder if that shade of green is popular today in the same way that pastel blue was popular in the 80's..

It’s Rolex signature green so it’s probably safer than any other color than black.

I don’t ever buy a watch as investment but it sure is evident that all of my 5 digit references tend to be trading at a much higher price than I paid for them.

I didn't buy for investment purposes, but do like the fact that I know my Daytona will probably be worth more in the future then what I paid today. You can't say that about many other watch brands or items that you purchase for that matter.
