I love bone marrow and Arrachera. I can't say I have had Outside Arrachera, so will need to compare notes in Vegas.

Let cooked steak rest for 7-10 minutes. Then either chop or cut in strips

CAREFULLY (I mean it, this is boiling and bones are VERY hot) use a spoon to scrape marrow on top of steak and gently mix....






Grilled marrow will coat steak

Personally, I heat corn tortillas and add the steak/marrow. A bit of salsa, some sea salt.....trust me, this is IT. The flavors are impressive! Texture....pure heaven!!!!!!!!! Perfect for a nice Cabernet or tequila.

Bone marrow is very easy to grill. Place facing up while you cook other things marrow will start to boil yet it will not fall down (you will need a spoon to take it out of bone). It will go from solid to creamy, you can lightly charr by turning face down, just remember that you WILL get flares if you do so.

Afterwards, handle carefully. Bone is VERY hot and contents are boiling. Some sea salt and BAM! (Emeril’s phrase)
