I agree with a lot of people
Daytona seems to be the Rolex missing there, even though it's not one of my favorite in SS. I think a BLNR would go pretty nicely as well.
Gold would be ideal but maybe outside your price range.
So I would heavily consider going outside Rolex, and maybe go with some color, ie. blue 5711 or 15202/15400 if your budget can swing it. Or PAM, JLC, Zenith, Speedster, might be more reasonable.

I think Daytona makes the most sense. My only issues is that it looks rather small on my 7" wrist. It definitely wears smaller then the new Sub. The DeepSea on the other hand is too big (too thick) for my taste and I already have a diver. I do not like YG, but I would love to have a Sky Dweller in WG or SS. I do like the YachtMaster II, but I think the countdown is a useless complication.

Sell the Datejust2 to help fund a DD2....then I'd move to Patek, A.Lange for the chronograph and movement complications.
