Sounds like the OP told his daughter he wanted to buy her a Rolex, she didn’t demand it. I think it makes sense that she is offering feedback on what kind she would like to wear. The gentleman is asking for watch buying advice, not parenting advice.
This

Agree 5k budget will be a big challenge

Honestly, rather buy her something for a milestone with an increased budget. Or when she realises that jewelry doesn't need to be gold coloured.

Millennial and full gold. Oxymoron of note

When a query is posed, we best just answer it directly without preaching.

Tell her Paris Hilton's sister, Nicki, wears a black dialed Milgauss. Clear crystal. Looks great on her!!!!! You are going to have to at least double your 5k to get something good in all gold.

Full gold is more for the older generations. It's a generalisation for which exceptions like you are always around.

Post pictures. I've never been into gold, maybe two tone but everything is steel for me.

here in nyc the majority of young people are wearing gold plated jewelry. maybe in other parts of the world what you say is true but not everywhere. take a look at all the young celebs and pro athletes and you'll see a lot of them are wearing gold and these are the people with all the instagram followers. we live in a bubble here with the SS mania, its completely different on the outside. the nba draft was 2 weeks ago and you had 19 yr old kids showing up with day dates instead of whatever hype'd SS models

and here's a pic

I'm not that much older but have never looked up to social media folk.

The SS craze has created more demand for PM pieces and what you describe makes sense. At least one can walk into a store and buy one.

My niece who is 28 just bought the new Rootbeer. It looks fantastic on her.
Your daughter might want to check the new TT GMT (Rootbeer)

This is the most surprising part to me - In my (admittedly limited) experience, 20-something women all seem to want larger watches. 34-36mm often seems to be the smallest size considered fashionable these days.

If she views TT as outdated (despite its recent renewed popularity), and she really wants a 26-31mm size (after actually trying on different sizes?), then maybe this is a young lady who does not follow the crowd, and is confident in her own taste.

Next threshold question is whether she would be happy with a YG on strap vs. bracelet. If strap is acceptable (or even preferred), and the smaller size is truly what she wants, you may be able to find a suitable Rolex. If she wants it on a bracelet, the $5200 Lady DJ linked above from Bob’s is the sort of thing which might serve. (Though I’d check out the details - IIRC the text says white dial, but photos show a champagne Jubilee dial.)

I still don’t have a clear answer on whether this gift is something the daughter is truly pushing for or if the father is projecting what he’s passionate about onto her.

But, here’s a very good option for a fashionable lady who likes gold:
