What is the real definition of a "grail" watch? Isn't it something that cannot be found or obtained? As in the "holy grail"? Or is it just the apex or peak of what you want?

I didn't know it when I bought it, but the Sub-C has turned out to be my "grail." I love it to the point of ignoring much of my other watches. It may wear off after a while, but this is the longest that I've been satisfied with just one watch.

There's no such thing as a grail, I always end up getting another watch afterwards. I thought my grail was my AP ROO but I still look around. Perhaps a Double Red SD or a Platinum Patek Nautilus with black strap!

In terms of Rolex, a 116710 - I would be exceptionally happy with one. In terms of my all-time grail, an A. Lange & Sohne Datograph is what really gets me excited!
