Before I start, I know this is NOT the way it is done in Brasil, I do not want to offend anyone if mistakes were made, I am just having some 'south america' time here

Awesome looking glow from the coals wish I was there with you drinking some Ensignia

They wrap that in rock salt to draw flavors out in Brasil. I can't find that cut here at the butcher, I'm sure they could do it tho. Knock the salt off and put it in the churrascaria

Picanha is unique. As you grill it, the smoke coming out of the grill is SWEET! A delicious cut with outstanding complexity. This, my homage to South America during Olympic games.

Looks Brasilian to me Gerardo ! Great job.

I made chili tonight and chicken salad with apples and added red seedless grapes, red onion and pecans with mayo. So kinda soup and sandwich night.

I have 5 Brasilian girls in the house and the wife isn't here lol
all for about 10 more days.

She's flying in tomorrow morning to save me..

I really miss Brazil. I visited in October and it was the best trip of your life. The food is one of the things I miss the most. This thread brought me back. Cheers.
