So how is it used to keep track of multiple time zones? Or does it only keep track of 2 ?

It's designed to show GMT or home time using the 24 hour, minutes and seconds hands (which move together when the crown is fully pulled out). In addition the normal hour hand is independently settable (in quick set hour jumps) without interrupting the GMT/home time so that you can show local time and day. A third time can be quickly referred to (instead of GMT/Home) by rotating the bezel.

That's right..
It's designed to show 2 timezones...all the time.. or one, if you have both hands set for the same zone. One on the dial, and the other on the bezel. You can then rotate the bezel to view another based on the 24 hr hand, but at that time, you no longer are showing the primary zone.. Some people set theirs up for all sorts of things, but they all require that you know your unique "system" and are outside the actual design..
