Would that be a grass-fed strip loin, about 14oz or so?

What kinda prep you thinking?

Costco is where I get my steak. High quality and reasonable. Underrated butcher.

Same here.

I am not sure if that is just an East Coast thing or not though with respect to Coscto carrying insanely high-quality meats. There aren't a ton of companies in my area offering USDA Prime beef, but my Coscto routinely has about 5-8 different cuts available in Prime grade. Top sirloin cap is probably my favorite.

I also like how they stock sockeye salmon year round and occasionally even chinook salmon.

You’re in Australia, right? If I had to choose a single location to blindly select beef from, that would be it. Every time I’m on the west coast and see it on a menu I always go for it. The country’s animal welfare standards and the high percentage of all-grass-fed beef makes for some excellent steaks! But not cheap.

As an aside, “prime” in no way indicates beef quality one way or another, simply fat content and distribution. So, many other factors aside, out could simply be that some prime beef is significantly better quality in other regards.

For example, often the case that more expensive beef, like free range, will have a lower USDA grading because its diet doesn’t lend itself to marbling as much.

Sorry, not sure why I thought Australia (and was on mobile so couldn't actually read location in profile).

The good stuff is expensive everywhere, though.

Costco Prime Filet Mignon is amazing for the price...almost no reason to go to any other butcher at the prices they sell it at. Beware of the rest of the cuts because they are blade tenderized. The A5 at Costco is also great, at a much better price than elsewhere.

Neither here nor there, but never understood the point of paying any extra for the prime grade on fillet.

Picked a few steaks to try last week at a farmer's market in Mammoth. For a good grass fed steaks prices were more than fair.

Those look truly exceptional. Interesting to see bone-in strips; dinner see those too often.

A5 Wagyu ain't cheap.

3-6 month dry aged ribeye and NY for about $50-60/lb is pretty decent.

They have a great restaurant right next to their butcher shop called Wagyu Bar… a must when in the Miami area if you want real Japanese Wagyu!

On most people's wrists, the meat was carefully wrapped in real leather.

We stopped buying steak and decided to get half a free range grass fed cow. It ended being 330 pounds of meat. Buying the meat like this is actually way cheaper

True story. We also a have a beef slaughtered yearly. But, when you do it yourself it can be tough to get some of the best cuts out due to the waste. So we tend do do mostly burger, roast, t-bones, ribeyes, sirloins, and buy the “best” cuts elsewhere.

Props to you for slaughtering your own cow. Do you wear your rolex when doing it?
