Depends on the interpretation of "in demand".

Highest number of people wanting, ordering, queuing, buying and wearing? Unknown. DJ looks like a strong candidate when you consider all the models available.

Hardest to get? Unknown. Maybe the SS Sky Dweller.

Daytona probably most common answer. I don't care for Daytonas. Would rather have a Speedy.

Sub is and always will probably the most in “demand” IMO.

Hardest to get etc is a different story. I’d like to think the Sub is the one that most SA’s get asked for because most know the Daytona/SkyD/GMT etc are impossible/no go.

Maybe now the DJ is a close second. Granted when I started buying Rolex’s nobody wanted a DJ. Times have changed though

I have a Sub and no interest in a Daytona, Sky Dweller, or Pepsi.

I’d say the opposite proposition is just as likely to be true - many people may not really like the “hot” watches, they just want them because they know they're hard to get and, thus, status symbols.
