Depends on the interpretation of "in demand".

Highest number of people wanting, ordering, queuing, buying and wearing? Unknown. DJ looks like a strong candidate when you consider all the models available.

Hardest to get? Unknown. Maybe the SS Sky Dweller.

For me, it was the 126610lv. Now that I own that one, its the SS BLRO...

Daytona probably most common answer. I don't care for Daytonas. Would rather have a Speedy.

I believe, the online search data suggests the Submariner is the most popular rolex model, especially in the United States. Check semrush and google trends

I'd wager that everyone waiting for a Sub would take a SS Daytona, SkyD or Pepsi if they were offered

The Sub is not the most "in demand", its the one that most people think they can get, so they go for it over other sport models

I have a Sub and no interest in a Daytona, Sky Dweller, or Pepsi.

I’d say the opposite proposition is just as likely to be true - many people may not really like the “hot” watches, they just want them because they know they're hard to get and, thus, status symbols.
