Depends on the interpretation of "in demand".
Highest number of people wanting, ordering, queuing, buying and wearing? Unknown. DJ looks like a strong candidate when you consider all the models available. Hardest to get? Unknown. Maybe the SS Sky Dweller. |

Daytona probably most common answer. I don't care for Daytonas. Would rather have a Speedy. |

Sub is and always will probably the most in “demand” IMO. Hardest to get etc is a different story. I’d like to think the Sub is the one that most SA’s get asked for because most know the Daytona/SkyD/GMT etc are impossible/no go. Maybe now the DJ is a close second. Granted when I started buying Rolex’s nobody wanted a DJ. Times have changed though

I'd wager that everyone waiting for a Sub would take a SS Daytona, SkyD or Pepsi if they were offered
The Sub is not the most "in demand", its the one that most people think they can get, so they go for it over other sport models
