16710 for me. It introduced the jump hour hand feature with the 3185 caliber movement which greatly adds to the GMT's versatility.

Despite me owning a 116710LN, the clear best GMT in my mind is the 16710 Pepsi. 5 digit Rolexes really had the charm of looking great (I'd argue even better) when they are obviously worn with dings/scratches and faded bezels.
Ceramics with PCLs have this weird dichotomy where the bezel keeps looking like a new watch but the PCLs get all scratched up with wear. Ends up looking like a dressy watch the owner didn't take care of properly. |

While the Pepsi or Batman is more modern, the simplicity of the ceramic 116710LN watch appeals to me.
