I think the model with the most "end users" waiting for around the world is the SS Sub Date.

Highest demand does not mean the same as Hardest to get.

I'd say this it true too. I always wanted a sub and was barely aware of the others. But I've been a lifelong diver so that probably has something to do with it. And the sub might be the most well known Rolex. (I know the DJ is more common but the Sub is well known in a different way among even the non watch enthusiast world) Aviation enthusiasts might feel the same about the various GMT's. I thought I wanted a Daytona after I got to know more about the brand but after seeing a few in person I changed my mind. Hard to read and the fact that the large seconds hand doesn't move unless using the chrono function would drive me nuts.
