I have tried the new submariner on my wrist and it feels the same as the prior ceramic submariner ie feels no different.
The submariner is a great watch and you can’t go wrong. The submariner is much more available then the GMT. If you were offered both by a dealer at retail go for the GMT no brainer because you can always get a sub.

Probably the best daily would be the 116710LN. Oyster bracelet, versatile black bezel, date and second time zones... it has it all. Once again I’m asking myself why I’ve never owned one.
