Simple Answer: Same reason as the 2T Rolex 116503 Cosmograph 18K/SS goes for just under $20K new while a Rolex 116500 Cosmograph White Dial goes for just under $29K.

Because it does and that is what the market dictates. The 116503 even has a fair amount of amount of gold compared to its Stainless Steel relative.
I actually don't know the answer. In an ideal world, I'd just buy all of them and have an instant Rolex collection.

I'm torn between the new 116710 and the old (but not that old) 16710 GMT. Which is a "better" start to a Rolex collection?
