Grand Seiko for me, love their watches. Finishing, materials, build quality are superb. Of course their dials there's no comparison for me. Spring drive and 9F's are ridiculously accurate.
After GS, huge fan of Omega.

Absolutely. Buying, owning, collecting and wearing a watch should evoke emotion. It’s subjective and personal. Build quality, it’s hard to choose a dud at the 5-10k price point. OP don’t underestimate your personal preference in addition to build quality.

Agree with all the advice on thread, with special emphasis on Blancpain and Glashutte Original. Will only add Sinn to the mix, since I didn’t see it mentioned earlier. Lower price point, but robust and aesthetically similar to Rolex.

New Omegas are great, but the Speedy (at least the 1861 movement Moonwatch) is not anywhere near as high quality feeling as their other watches, the movement is also pretty inaccurate relative to other major brands, I experienced 11 seconds fast a day out of the box, have not experienced the new movement speedy, maybe it feels better, and certainly the movement is much improved.
If you want a nice chrono that is not a Daytona, Zenith or some sort, Omega Planet Ocean or Seamaster 300 are great and the Master Chronometer movements keep excellent time. Blancpain's Fifty Fathoms are also very nice, I'm not a fan of the styling of the Bathyscaphe and the non Bathyschaphe ones are 45mm, so some may find them to big.

I'm not actually sure that other luxury brands match Rolex in durability, build quality, or manufacturing tolerances -- with the possible exception of Tudor, since Rolex is behind those. But assuming you aren't abusing the watch, good options are:

I love the omega seamaster 300. I got mine in titanium and rose gold and I think it can compete with the two tone Rolex sub without the big secondary market price tag

It's all personal preference. I like:
- old eta based panerais (000, 005, 111, 112 etc.). New in-house ones have become very expensive recently and I think quality is not what it used to be (loads of Internet articles on this) - Glashutte Original Seaq - awesome but expensive. Terrible resale if you change your mind. - Tudor - BB58 and pro both seem great, especially for the price. They are on my list. - Longines Spirit line - I bought the 42mm black dial on leather recently (non-GMT) at 30% off (~£1350) and its amazing! Best value watch on the market in my view (and yes, that includes Tudor!). - Certain Seiko/GS models. Bit of a mixed bag in many ways - best to go very cheap (e.g. srp Turtle) or very high end I reckon! Longines is better in the midrange. Hope that helps |

Movement finishing, unless you have a see through caseback, you have to imagine. Movement construction, Rolex has spent years up grading their movements: 1200 series, 1500 series,2000 series, the 3000 series, and all are designed to be functional rather than aesthetic. Omega produces excellent watches, trading on a long history. Their biggest problem, they are part of a conglomerate having numerous brands. All the brand managers fighting for a larger slice of the budget. Cartier is interesting, part of a conglomerate, but enjoys a world wide recognition value for luxury.
