If you found yourself shipwrecked on a deserted island, which Rolex model would you want on your wrist and why?

I would go with a later period SS Pepsi GMT. Functional, a bit of color, durable, etc.

Owning two gmt’s and a sub, I would take the sub. Just spin the bezel to where the 24 hour hand would point (if it was there) and now you know north. Then you have the timing functions etc as well. Although I guess one could argue you could use the triangle of the gmt for timing as well.

So I’ll take whatever is on my wrist lol

I think it depends what kind of island it is and what are your chances of survival. If the chances of survival are basically zero, then I would want something nice but comfortable. Maybe try color day date?
If the chances are slightly higher, and a functional watch, could help improve those odds. Maybe a seed dweller date. You can time things and you can also keep track of the day, as long as you know how many days are in each month. You can keep track of the years as well. And it is one of the least likely to Let water in or fail. Like almost all watches, you can also use it to tell the cardinal directions.

I'd want something like this in case I needed to build a tree house or whatever and do some calculations, or just alleviate the boredom seeing what words I can make with the upside-down numbers. Hopefully I'd be rescued within the 10-yr battery life. The hourly sig beep would also help keep track of the daylight hours. Plus it's only about $30 on Amazon. I'd just hope I remembered to pack the manual.
