What are my Subs Jewels made from?

My 16610 has 31 jewels, what are they made from?

Corundum, or aluminium oxide (Al2O3) .

Seriously though, they are man-made/synthetic "rubies/sapphires." Doing a search on our site will lead you to a lot of good information about your Submariner, the 3135 movement (which actually has MORE than 31 Jewels, as you will learn), etc.
