You can definitely tell up close although other distinguishing factors usually make it more obvious. E.g. The blue dial bezel combo on the smurf sub isn't available in ss. Similarly the alignment of the wg daytona bezel writing.

White gold is an alloy. The maker controls the color (there isn't a set spec for WG, that I know of) and adds non-gold metals to turn yellow gold into white. I'm not aware of any coating on Rolex WG.
