There's no difference between original and service inserts, both come from the same factory. We talk about Rolex genuine inserts fo course.
Regarding GMT/GMT2, there's 2 different versions of inserts, plus the ceramic ones. One is for plexi crystal (fitting 1675/16750) and one is for saphir crystal (fitting 16760/16700/16710). They aren't compatible, so be carefull when you buy one. Rolex policy avoid AD to simply sell you one, they have to keep yours if you want to buy a new one. For that reason you need to look at the "For sale" section here or elsewhere.
