Hi,
I am still learning so please bare with me.

Have few questions.

16613 is the older one that has better design as far as I understand.
Now, Rolex started engraving RolexRolexRolex on the inside bezel in the middle of production and then the whole 16613 line was discontinued correct?
Now its unclear to me which series has the engraving. The M or Z? (different sources say different things)....

Also another question. Is there "no date" submariner which is blue? Or all of them are black? Thanks.

All Submariners are black and have no date.
It is the Submariner Date models that come in colors.

Yes the 16613 has been replaced and is no longer made.

The engraved rehauts came out during Z serial #'s for SS models. Some precious metal models were issued with engraved rehauts before that period. And since the M serial #'s came after the Z's - they also have engraved rehauts.

Welcome

The Champagne dials are referred to as "Serti Dials" as they have precious stones on the dials. You would see these with the engraved rehaute as well. There may be aftermarket versions of these dials made. As far as a guide, IMHO, the best guide is to hang out here and learn about the Sub and its many variants, most of which apply to the SS version.

Apart from a few cosmetic details the 16613 has changed very little since introduction of the cal 3135 movement in 1988.The new model is 116613 which uses the same movement but a slightly different style case and a ceramic bezel insert and bracelet and clasp.Now the Serti dials 16613 have different dials from the black/blue range as they have precious stones for the hour markers and SS is S.steel.

Some people swap the dials.... Because on some listing I see "factory dial"...

Factory dial is just that from the Rolex factory,aftermarket dial is one that's been altered and not original Rolex made.
