Welcome to the Forum, first of all.

Go with the sunburst dial. Can't speak for others, but diamonds just aren't my cup of tea and neither is the flat blue dial. Rolex made a great decision by bringing back the sunburst dial to the LB. This one is definietly on the list for my next Rolex purchase.
