What transpired sounds odd, but you are mistaken about serial numbers.
They do not "just" denote a date and sequence. Each serial number in the Rolex database is identified with a particular watch and exactly how that watch was configured when it left the factory, including model #, bezel, dial, movement, and bracelet. If your watch were mangled in a mix-master, and you sent it back to them; it could be configured the way it was originally manufactured using only the serial number. That serial number record would then also be modified to show what was done to rebuild it....i.e., new case number, crystal replacement, hands...etc.
