Welcome to the Forum.
The instructions are trying to tell you not to change the date manually with the crown while the auto date change is in operation. The auto date change on your watch engages between 9.00pm and 3.00am. If you did change the date using the crown while the auto date change is engaging then you might cause some damage. If your Longines is still date changing ok then you are probably good to go. You can set the time whenever you want. Modern Rolex watches are not harmed by changing the date at any time. Can't help with the bracelet - any pix of this problem?
