I've lived with a bunch of old clocks... all of them had some form of friction clutch between the hands and mechanism - to set just touch the hands and move them. easier than twisting a crown

Only complication are the movements with quarterly repeaters, they'll go outta sync... can either change the hands in quarterly movements all the way (need to wait for chimes to finish every step) or disconnect the chiming and change the time in full hour steps. Reconnect chimes and do final 1-3 quarters.

And yeah, mice love making nests in clocks
