Depends on usage. If you're using the word Rolex informally to describe a particular watch, then it is a thing that you are describing, just like a box. "Rolex watch/es" is correct, but the OP asks for the plural form of the word Rolex. Since no authoritative dictionary is likely to provide a definitive answer, then it is reasonable to look to other common uses of words ending in "x" to formulate an answer. Index/indices is one example, but "-xes" is the most common form.
