Limited 26mm Datejust and OP Options?

I'm looking for a Ladies Datejust and OP that Rolex doesn't make right now. How do I figure out if Rolex has made it in the past? Is there a database or catalog of every Rolex ever made?

I am looking for a 26mm Datejust Oyster bracelet blue dial with sticks. Right now Rolex only sells a blue dial with a Roman numeral dial.

I am also looking for a 26mm OP black dial with sticks (no 3-6-9). But Rolex only sells 26mm stick dials in grape, olive, and silver.

Will Rolex let you change out your Datejust dial for any other dial in stock? Do they keep older models' colors in stock?
