Advice - buying for Dad

I am planning to get my Dad a Rolex for his 60th birthday. He has never bought many nice things for himself as his life was dedicated to making sure his kids would be ok. A few college degrees later for his kids ($ from him) and my brother and I are in the lucky position to be able to collect in our 20's and 30's.

Question to those who have gifted, is it as special giving a preowned watch (I am thinking 16710 or 16600) or is new from AD (likely 114060) the only way to go? I love the idea of the 5 digit models, but want to make sure the gift is "special".
